Just had this for my post-yoga snack! SO SO GOOD! I replaced the egg with 1/4 cup unsweetened natural applesauce and 1/2 tsp baking powder. I also added a dash of sugar! By replacing the egg, I saved 45 calories!1 Minute “Clean” Berrylicious Microwave Minute Muffin
- 1/4 cup quick oats
- 1 egg
- small handful of organic blueberries
- little bit of brown sugar/stevia (optional)
- tbsp soymilk (for added moistness!)
Mix it all up into a coffee mug!
Put it in the microwave for 1 minute, make sure it doesn’t overflow! Add an extra 30 sec if it needs to firm up.
